I was skeptical about using EVOO for high-heat cooking, but the Picual olives really hold up—I've seared chicken and roasted veggies without any burnt or bitter taste. It's still got that fresh, peppery finish I love from a good extra-virgin, so it does double duty in my kitchen.
The high smoke point on this is a game-changer—I used it for a seared chicken dinner last night and there wasn't a wisp of smoke, plus the flavor held up instead of turning bitter. It's also noticeably smoother than the cheaper stuff I was using before.
